Responsibilities: Business Unit / Department Mission: Inspects, wraps, rotates, cuts, tests, and orders meat for new and existing retail customers by performing the following duties.ESSENTIAL FUNCTIONS AND PROCESS RESPONSIBILITIES
(Other duties may be assigned as necessary)
– Must be familiar with over 100 cuts of meat. Responsible for Market operation in Manager’s absence.
– Assists Manager with organization and delegation of duties, including scheduling.
– Cuts meat for full and self-service cases.
– Organizes and delegates the day-to-day operation of the meat market.
– Places and receives meat orders, includes inventory control.
– Monitors work conditions for safety and sanitation.
– Cleans, sanitizes, and organizes the meat cooler, the cutting room, and the wrap station.
– Performs cutting tests on the profitability of retail meat cuts.
– Provides internal customer service. Assists in supervising up to 10 employees in the Market Department.EXPERIENCE AND EDUCATION PREFERRED
– Typically requires 5-8 years of related experience.
– Knowledge of department product, food preparation, and equipment required.
– Supervisory experience preferred.
– 2-3 years exp. in meat cutting, food preparation, and equipment required.
– Food Safety and Sanitation Certification preferred.PHYSICAL AND OTHER REQUIREMENTS
– Function in a fast-paced, retail environment
– Lift 20 lbs or more on an occasional basis09-2011
